Existing ranch has very low ceilings 7 8 so dropping any ceilings will not work.
Best way to run water line in attic.
When using modern plumbing materials such as pex tubing that is flexible this is often the best choice.
Through this can be pulled the pex water lines.
Water line would run over the top of the 2x4 bottom truss cord and i would create a tent over pipe so there was no.
Once the drain system is assembled and cemented plug the drainpipe at the lower end.
It is never wise to run water lines in an outside wall or above an insulated ceiling in an unheated space.
All lines are coming from under the slab in each part of the home where water is needed.
Need to get a hot water line from one end of the house to the other in a ranch with a concrete slab.
Perhaps you can do one of the following.
I recently repaired a pipe at the back wall of my home where as l had to dig under the slab and it was reachable.
Connect the water lines.
Pull and secure the lines.
For better support at every two to three feet along the water line use a nylon or cable clamp to secure the line to the cabinet back or along a floor joist if applicable.
Keep the fridge water line from kinking as you complete the run.
Run the lines under the floor in the basement not unheated crawl space where freezing will be much less likely.
If ever a leak you can pull new lines through the pvc without digging up slab once again.
The pipes should slope gently away from the existing vent pipe so water can travel downward.

Two common ways to run plumbing.
Run the new vent line over to the tee fitting.
Most often it is easiest to simply run new pipes in the same cavities that contained the old plumbing.
Maybe the proper fix for the under the slab routing of the water lines was to install 4 diameter pvc piping under through the slab that has all gradual turn corners.
Your inspector may want you to include a tee fitting to be used for testing.
Run the lines under the insulation in your ceiling next to the heated drywall.
My plan is to run pex thru the attic below the insulation.
It is also important to run the pipe as low in the attic as possible to provide heat from the ceiling below.
Run the water lines.
If possible run it under the attic insulation for an added layer of protection.
Rough in the lines.
These spaces are already designed to allow for long unbroken runs for pipes.
30 year or more home built on a slab and water lines are being damaged and lines are breaking.
Position the ball valves.
Mark and drill the holes.
No interior walls to use either.
Insulation will help maintain water temperature levels in the pipes.
Do the rough stub outs.
